Email from Amazin' Grazin' Beef

Finished means that it has got fat and marbling. We have some young beef (approx. 1 year old) that is much leaner and they have been born and raised on grass along with still getting some of their mommas milk (we butcher them at the time of weaning). Then we have grass finished meaning that they are a bit older (approx 2 years old), they have been weaned and finished (fat and marbling) on grass. That is the difference between our young beef and our finished beef. As for other producers and their wording, you really have to ask the hard questions as you did with us, because unfortunately its all about the deceitful wording with some folks out there. Its sad that we can not trust labeling anymore. Especially labeling that has USDA or FDA certified on it, as they are the ones behind the guidelines set up for the labels. The most important thing is to get to know your farmer/rancher/producer. That way you have a relationship with the actual source of your food.

As for humane, we have hand raised the small herd that we started out with many years ago, and our family love what we do, and love raising the cattle. We do not butcher on site, daddy takes them to a mom and pop butcher in Plant City, and stays throughout the entire butchering process, as he has very specific thoughts on how it ought to be done in order that it is done right.
