Day 8, right?

worked from 11 to 7p, so my first meal was more of a brunch.

meal 1: 2 HBEs, macadamia nuts, & banana, straw- & blueberry mixture = YUM

meal 2: salad: dark greens, tomato, avocado, cashews, leftover turkey, 1 HBE, lemon, crystal hot sauce (need substitute), apples = YUM

WOD: 400 meter sprint times: 1:43, 1:43, 1:42, and 1:41. no fouls! :) used 14 lb ball for wall ball shots. took 3 minutes. that 14 pounder is a bear.

meal 3: made paleo banana flaxseed pancakes (ingredients: banana, flaxseeds, almond butter, & eggs; cooked in coconut oil; drizzled honey on top.) from live primal. is more of a breakfast meal, but was eager to try them. (yesterday i ran out of eggs.) they were Fn GOOD!!!! i will never return to flour pancakes. they were that good, people!

some paleo meatloaf is currently baking in my oven for tomorrow. i made it with my next to last package of GF beef. :( is a live primal recipe. am excited. hope is good. :) for recipe see below.

Meatloaf
1 diced onion
2 lbs of GF ground beef
1 cup almond meal (i substituted flaxseeds; hope it doesn't taste like ass)
2 eggs
1 tbsp crushed garlic
1/2 tbsp sea salt
2 tbsp dried basil
1 tsp marjoram (i substituted oregano)
cracked black pepper to taste
1 can tomato paste (didn't include; i'll use a paleo tomato sauce 4 dipping)
Mix all ingredients by hand in large mixing bowl. Place mixture into large glass baking pan; form into loaf. Bake at 350 degrees for 1 hour or until meat is no longer pink in middle.

i need to make homemade hot sauce SOON. i located a few recipes to try:

1. Sambal Oelek (hot chili and lime sauce)
1/2 cup finely chopped fresh hot chilies
2 tablespoon fresh lime juice
1/2 teaspoon sea salt
1/4 teaspoon finely grated fresh lime peel
Combine everything but lime peel in blender; blend at high speed for 10-15 seconds. Scrape down sides of blender; continue blending until chilies are completely smashed. Transfer to bowl and add lime peel. Refrigerate until ready to use.

2. Home Made Hot Sauce
2lbs of fresh cayenne peppers (tops removed)
3 Tbsp sea salt (or kosher)
Put peppers in food processor. Add salt. Puree to a liquid paste. Place contents in mason jar. Place jar in a dark cool area for 3 days. After 3 Days, add 3 cups of white vinegar (substitute apple cider vinegar). Add mixture to a bowl; mix well; place in 2 mason jars or cut back on some of the vinegar to make it fit in one. Place mason jar back into the dark cool area, like a root cellar. Leave undisturbed for 5 days. After 5 days, mix well, and pour through a sieve. You should have hot sauce.
Discard the solids, or keep them as a paste for cooking.

Wow, lots of great recipes! I might try the meatloaf with ground turkey later this week.

I am very intrigued with the banana/flax seed pancakes. That is definitely on the menu this weekend.

I love chili pdr with fresh lemon, Also, celery seed. And for when I feel sassy? CURRY. oh yeah. get some. you can haz curry if youz sassy.

For the stuffed peppers, I subbed the almond meal with pecan meal which you can actually get at Publix and it works really well.

That might work with the meatloaf if you are worried about the flax.

Let us know I think I may try the meatloaf this week!
