A note on Salsa

Day 13 (Lost Saturday)

still sick, but my sore throat is much better, so that's progress. i hope i am virtually symptom free by tomorrow, but that seems unlikely. am still dizzy and weak and congested. i curse these, bacteria!

i found and bought the "clean" salsa from Fresh Market after running out of the delicous Green Mountain Gringo salsa, which i highly recommend. The GMGS uses apple cider vinegar, and openly lists ingredients. The Fresh Market salsa simply lists vinegar, which could be any kind of vinegar, as a main ingredient, and lists other spices as secret. So who knows what's in there! plus, IMHO, GMGS tastes better. bfast made by my mister: 2 eggs, clean sausage, avodaco, salsa, blueberries, raspberries, sunflower seeds, honey

lots of OJ and tea throughout the day.

lunch: meatloaf and 2 paleo nutty coconut cookies

dinner: meatloaf & red pepper, cauliflower, onion, & garlic sauteed in walnut oil

You can also find "clean" canned salsa in the hispanic section of publix (not where they keep the Old El Paso). It is just veggies and maybe a little salt.

Thanks for the 411, Jim. I think you can find the Gringo Salsa--love the name--at Publix, too. I bought my GMGS at Whole Foods. Won't be making that trek this weekend.

Spaghetti squash is far less ambitious than your paleo endeavors these days. Grab a squash and poke some holes in it, bake at 375 for about an hour, split it open and scrape the 'spaghetti' out. Top or toss with random veggies or sauce. It is quite easy and delicious. Hope you are back soon, we miss you and your guns :)

I am going to try that Gringo salsa, thanks for the tip. Hope you are feeling much better. About time you think you are just about over it, rest for another day so it doesn't rebound.

I tried making the nutty coconut cookies and can't get them off the cookie sheet. What a mess. I AM stupit.

it was the consistency before I folded in extra coco. Too runny, so I kept folding ot firm up. As they baked, they were forming up into cookies, but with little puddles of gummyness around them...taste good, but not the same as yours...help!
