i made a delicious and colorful dinner

Day 32

the theme in my life these days is OVERWORKED & OVERWHELMED. I must keep repeating to myself that this will change relatively soon. this will change. this will change. i haz the pow-ah!

meal 1: blueberries, raspberries, spinach, olive oil, 2 HBEs

meal 2: at Chef Brooke's. i found a delicious and nutritious meal with no grains, rice, breads or cheese of any kind. i ate Japanese style chicken and veggies of cauli, eggplant, squash, cucumber, tomato. only drawback: was a bit salty. i think the dish was dressed with a bit of soy sauce, hence the saltiness. i feel good when i eat @CB's, though. she uses top quality organic ingredients; hopefully the sauce was of the less evil variety. other than the sauce, the meal was perfect.

i am trying my best to stay awake at work right now--is 2p. i am shutting down. my body and mind are screaming for a nap. haven't slept well the past two weeks--see overworked reference above. am sipping zen green tea right now to awaken me, though tea has very little caffeine compared to coffee. most coffees have 5 times the caffeine of your average tea. yowza! too bad i think coffee tastes like poo.

snack: banana and walnuts -- v hungry at 4p! must not have been any fat in my lunch.

CFE: 20 minute run

WOD: I PR'd!! bench press 5x -- i lifted 73, almost completed 5 at 78; was mere inches away from completing 5th rep; just couldn't get it all the way up. i was trying so hard that my hamstrings started screaming. NEXT TIME!

dinner: successful experimentation! paleo chicken loaf (the loaf was supposed to be balls -- is OK); red pesto sauce, spinach & yellow pepper in coconut oil, little dark choc

Loaf/Ball Recipe:
1 lb ground chicken
chopped onions, garlic, and carrots
2 eggs
1/2 cup almond flour
flaxseed
dried oregano, garlic powder, cracked black pepper, cayenne
drizzle olive oil on top

Pesto Sauce Recipe:
1 can tomato sauce (Glenn Muir)
1 can tomato paste (Glenn Muir)
basil
fresh garlic
almond flour
olive oil
pinch of sea salt
cracked black pepper

I LOVE THE SAUCE!!! reminds me of a the pine nut pesto sauce i used to make for a pasta dish. substituting the Parmesan w almond flour generates perfection. so so good. is my new staple sauce/dish. happy dance!!!
